Number of Servings: 6

Ingredients

    10 Large Eggs
    1/2 Cup Soy Milk (Lite)
    1 Cup Colby cheese
    6 slices of Canadian Bacon
    1 Cup chopped Broccoli
    1/2 cup Green Peppers
    1 Cup Chopped Onions
    2 Tbsp. Grated Parmesan Cheese

Tips

Salt and Pepper to taste
Also try Mrs. Dash


Directions

Saute Onions and Green Peppers in pan. (Use Pam Spray)
Chop Broccoli
Spray pan with pam (9 x 9 ) Pan
Sprinkle 1/2 of Colby Cheese in Pan
Beat Eggs and add Soy Milk - Pour into Pan
Dice Canadian Bacon
Combine Canadian Bacon with Sauted Onions/Green Pepper - Add to pan
Gently Stir.
Sprinkle remaining Colby Cheese on top
Sprinkle with Parmesan cheese
Bake on 350 for approx. 34 - 40 Minutes
