Ingredients

Sweet potato, 2 sweetpotato, 5" long (remove)
*Extra Virgin Olive Oil, 1 tbsp (remove)
    Granulated Sugar, 1.5 tsp (remove)
    Salt, 1 tsp (remove)
    Chili powder, 1 tsp (remove)

Tips

Add your own seasonsings to the salt/sugar/oil mixture - cinnamon or ginger for a sweet/spicy coating, cajun spices or black pepper work nicely as well. Serve with yogurt, sour cream or honey-mustard dipping sauce.

Directions

Peel potatoes and cut into finger-sized wedges. Par-boil for 6-8 minutes. Allow to steam dry 15-20 minutes. Drizzle with oil, sugar, salt and spices and stir or shake to coat. Spread on a baking tray and bake in a 200-215 degree celcius pre-heated oven for 30-45 minutes or until lightly browned and crispy. Turn wedges once or twice while baking to cook evenly.
