Ingredients

    1 Head of Romaine Lettuce Chopped
    1/2 a red , yellow or orange pepper, chopped coarse
    a dozen small grape tomatoes or half dozen cut in half


Tips

Adding 3 oz of chopped leftover chicken or shrimp or two strips of crumbled crisp cooked bacon adds another 100 calories, but adds protein and flavor..... especially if the protein has been cooked with a lot of herbs, spices and flavorings.... and I'm not talking KFC here

Adding 1 oz of Fajita Beef that's been shredded or deli sliced, 1 oz of shredded light cheese and a mix of 2tbsp light sour cream and 2tbsp of salsa instead of regular dressing..... Beef taco salad without the added fat
This is just the base salad


Directions

Chop lettuce into a large glass bowl that has a lid
top with pepper and tomatoes
put your choice of a healthy dressing in separate container to dress at work - no more than 120 calories worth or it's not worth it
