Green healthy goodness in a delicious soup! Green healthy goodness in a delicious soup!
Number of Servings: 8

Ingredients

    2 cups chopped leeks
    4 cups chopped spinach
    4 cups chopped kale
    2 cups chopped broccoli
    2 cups shredded bok choy
    1 tbsp Extra Virgin Olive Oil
    8 cups vegetable broth
    1 tsp ground cumin seed
    1 tsp ground fennel seed
    1 tsp ground turmeric
    1 tsp curry powder

Directions

Saute chopped leeks in extra virgin olive oil until tender. Add in the chopped spinach, kale, broccoli and bok choy. Saute for a few minutes then add 8 cups of vegetable broth. (use low sodium organic when possible)

Cover and steam for 15 minutes stirring occasionally. Add in spices and simmer for another 5 minutes.

Puree the soup in small batches in the blender when cooled. Yummy heated or cold.

Serving Size: makes 8 1 cup (250ml) servings.
