Ingredients

    1 Pkg Pacific Naturals Vegetable Broth
    1 Can Diced Tomatoes
    1 lb Kidney Beans
    5 Garlic Cloves
    1/2 Onion
    3 Jalapeno Peppers
    2 Cups (raw) basmati Rice

Directions

Soak beans overnight
Chop onion, garlic, and peppers and add to crock pot
Add Beans and vegetable broth
Add seasoning
Cook on High 4-5 hours
Cook rice and add to crock pot last 15 minutes

    This is just the recipe I've been looking for! I just made a couple of changes due to lack of supplies on hand. I used fat=free chicken broth instead of veggie. I also didn't have jalapenos, so I used a can of Ro-tel diced tomatoes with green chilies. Very tasty indeed :-) - 1/30/09

    Incredible!
    I used this recipe as the framework for my own recipe using CANNED red beans, olive oil (1 T), 1 whole onion, 5 cloves (at least) garlic, chicken broth, and just one jalapeno. Saute all in large pan. Easy and delicious, but the dry bean method is probably healthier (?) - 10/5/13
