Introduction

Every time I would go to a hockey game or a fair I would find these amazing Tacos in a Bag. I loved them however I wanted to find a better way to make them. I have no idea how many calories were in the original however this one is not too bad. ( that does not mean it is wonderful either. Number of Servings: 20

Ingredients

    Ground Beef or Turkey or Chicken 5 pounds. ( I had 5.81 pounds when I made this)
    3 small onions diced
    1/2 pepper, bell your choice diced
    5 tbsp chili powder
    2.5 tsp Fiesta Lime seasoning mix (Mrs. Dash) (Any fajita mix will work but Mrs. Dash is salt free)
    2 tbsp Garlic Powder
    3 cups black beans (please try to use dried beans that you cook your self. They taste so much better then the canned stuff however if you use canned RINSE RINSE RINSE and use 2 cans)
    Lettuce, Tomato, Salsa, Cheese, Greek Yogurt (All of these items are not included in the nutritional values) If you have not tried to sub. Greek Yogurt for Sour Cream it is amazing (and I HATE yogurt)

    Nacho flavored chips. ( I would have made some from scratch but didn't have the time I have seen this done with Frittos and regular tortilla chips) Again not included in values

Tips

This is a great way to have a quick and easy meal all ready to go you just make the meat up once and you are done.


Directions

Brown the meat. Drain and Rinse really well. Place back in pan.
In a separate skillet, saute onion (sweat) for about 10 minutes. Add to Hamburger.
Add Green Peppers and Seasonings.
Cook for about 10 minutes until heated back up and seasonings have blended.

To assemble:
Chips
Meat
Cheese
Salsa
Greek Yogurt

Mix together then add lettuce tomato and any other items you want.

Serving Size: Makes aprox. 20 or 25 servings of 4 oz meat plus chips

    Thank you for the re-do! And I agree with you about the Greek yogurt. Who would have known! Not only do I get to feel like I'm eating sour cream (definitely tastes like it!), but I know it's healthy, so how can you beat it! - 10/14/13
