    2 large sweet potatoe diced
    1 sweet onion diced
    1 sweet red pepper diced
    2 cloves garlic minced
    3 tblsp olive oil
    black pepper


Great for breakfast served with an egg. All spices to taste.


Boil diced sweet potato in salted water for 3 mintes drain. In a skillet heat the olive oil. Add the onions and garlic and red pepper. Cook until soft. About 10 minutes. season with salt, oregano, paprika and black pepper. Add the sweet potatoes and cook until browned.

Serving Size: makes 4-5 servings
