Introduction

Ingredients

    1 LB ground turkey or chicken
    1 tbsp canola oil, divided
    1 cup chopped onion
    1 large bell pepper, chopped
    3 cups tomato sauce (I used one 14 oz can plus homemade sauce made from roasted onion, pepper, tomato and carrots which is why I have carrots listed in the calorie count)
    2 cups cooked brown rice
    16 cups shredded green cabbage
    1 tbsp Italian seasoning

Tips

This can be kicked up a notch with some crushed red pepper flakes or even hot sauce. Some also like it with sauerkraut mixed in with the rice, meat and sauce mixture but I left that out so if you add it, make sure to add it to your nutrition tracker.


Directions

1. Cook the ground turkey or chicken in half of the oil. Set aside.
2. In the same pan, cook the onion and bell pepper until tender.
3. Add meat back to pan and tomato sauce. Add Italian seasoning. Simmer a few minutes to blend flavors.
4. Stir in rice.
5. Spray large pyrex pan with cooking spray. Spread half of the cabbage and layer on half of the tomato/meat/rice mixture. Repeat layers.
6. Bake for approximately an hour at 375 degrees until hot and bubbly.
