Ingredients

    2 lb. pork sirloin roast, cut into bite-sized pieces
    1 med. onion, coarsely chopped
    1 T. olive oil
    cumin, chili powder, oregano, salt, and pepper to taste (approx. 2t. cumin, 1/2t. chili powder, 1T dried oregano, 1t. pepper, 1/4t. salt)
    2t. flour
    1 can (7 oz.) diced fire-roasted green chilis
    1 can (14.5 oz.) diced fire-roasted tomatoes

Tips

Add a cup or two of cooked black beans near the end of the cooking time for added fiber.


Directions

-Heat olive oil in a medium dutch oven.
-Add onions and pork and stir until onions are soft and pork is lightly browned.
-Stir in spices and cook until fragrant
-Sprinkle flour over pork and stir until incorporated
-Stir in green chiles and tomatoes
-Cover loosely and simmer for approx. 2 hours, or until pork is tender
