Introduction

I was home sick today and while Pinterest'ing my sickness woes away debating whether I would be trekking to work, I found this picture of Lasagna Soup (original recipe featured on this foodie blog - www.joanne-eatswellwithothers.com/2012/10/

But the recipe (while very nice and simple) didn't quite ring of "LASAGNA" to me.. in fact it was missing the key part of a good gooey layered treat.. the ricotta cheese and the fresh "mozzarel!".. and then I thought of another recipe featured in this month's Bon Appetit for Ricotta Gnudi and Pomodoro sauce (www.bonappetit.com/recipes/2013/02/ricott
a-gnudi-with-pomodoro-sauce) and this recipe was born... a warm bellyful of lasagna flavors that was perfect to warm my body and soul.

Number of Servings: 6

Ingredients

    2 cups of unsalted vegetable broth (or whatever you have handy)
    1 Medium Onions, rough dice
    1 tbsp Olive Oil
    1 cup of your favorite spaghetti sauce (I used Lucini Rustic Tomato Basil Sauce)
    About 1/2 of a large can of Whole Peeled Tomatoes (about 2 cups)
    Garlic, 4 cloves (minced)
    5 oz of Chopped Frozen Spinach
    3 oz of Bel Gioioso (Fresh Mozzarella Pearls) (diced, used for topping)
    1/2 Cup Kraft - Italian Five Cheese blend (or regular Parmesan)
    1 health bunch of fresh Basil (chiffonade)
    Salt & Pepper to taste
    You can use any meat you like.. I used homemade mini Turkey Meatballs (about 8 oz total)

Tips

Once the soup simmers for about a 30 minutes and the gnudi are ready, place 2-3 gnudi on top of each soup bowl, top with fresh basil, fresh mozzarella and a sprinkling of the italian cheese blend.


Directions

In a medium pot, saute the onion in the olive oil until slightly translucent, add remaining ingredients and simmer for about 30 minutes.
