Ingredients

    2 cups cooked quinoa
    1 can black beans, drained and rinsed
    1 can pinto beans, drained and rinsed
    2 cans Rotel tomatoes w/ chiles
    3 cups frozen diced tomatoes
    2 cups frozen sweet corn
    3 cups pulled roasted pork chops
    1 Tbsp chile powder
    1 Tbsp cumin
    1 tsp dried oregano
    3 cloves garlic, minced
    1 Tbsp onion powder

Tips

I figured the serving sizes on 1/2 cup servings because that is all I can eat. Most people would eat 1 to 1 1/2 cups. Serving suggestions: top with cheese, avocados, onions, etc. Whatever you like!


Directions

Place all ingredients in to slow-cooker. Cover and cook on LOW for 6-8 hours.
