Introduction

Hearty split pea soup with chicken and veggies. Hearty split pea soup with chicken and veggies.

Ingredients

    10 C Chicken Broth
    1 medium onion diced
    5 small celery stalks diced
    2 C carrots diced
    2 cooked Chicken breasts diced
    3tsp dry Garlic granules
    1/2 tsp black pepper
    2 chicken boullion cubes
    1 package (16 oz) dry green split peas

Tips

I like to boil a whole chicken each week and use the fresh home-made chicken broth. It works great in this recipe and in place of oil for sauteing veggies.


Directions

*Use the broth from a boiled chicken or canned.
Pour just enough of the broth to cover the bottom of a large sauce pan.
Add diced onions and cook until tender.
Pour in the rest of the broth and bring to a boil.
Add the diced carrots, celery and the chicken boullion.
Return to a boil and add a 16 oz package of dry green split peas.
Add dry garilc granules, 1/2 tsp of pepper. Stir and turn heat down.
Let simmer for 25 minutes.
Dice 2 cooked chicken breasts and add to the soup.
Season to tast at this point.
Simmer for another 10 - 20 minutes.(check the softness of the split peas.)
Serve and enjoy.
