Ingredients

    1/4 cup dry lentils
    1/2 cup of water PLUS (I ended up using 1 1/2 c. of water)
    2.5 oz diced tomatoes
    1 T. chopped onion
    1 celery stalk, diced
    1 garlic clove
    Season to taste

Tips

Time Saving Tip: Make up a batch the night before and reheat the next day. Example: While you're eating dinner and cleaning up.


Directions

Chop celery and mince garlic.
Combine lentils and water. Bring to boil.
Lower heat to simmer, add tomatoes, onion , and celery.
Add 1/2 c. of hot water.
Cover and let simmer 45 mins. Check every 15 mins to stir, add water if necessary.
Add desired seasonings /spices.
