Slice baby carrots, cube potatos, dice onion and celery, and mince garlic.
Heat a tall soup pot (2 galon size). Sear chicken in the pot. Add onion, garlic, carrots, and celry and sweat veggies for about 10 minutes stirring frequetly. Add potatos and enough water to fill pot to about an inch under handle bolts. Stir in chicken base and bring to a boil. Simmer until potatos and carrots are done.
