Introduction

Ingredients

2 cups frozen spinach
1 cup grated carrot
3 cups whole wheat flour
1 tbsp salt
1-1/2 tsp sugar
1 tsp chili powder
1 tbsp curry powder or garam masala powder
1/4 tsp ground turmeric
1/4 cup butter
Directions
Thaw the spinach, grate the carrot, mix with the whole wheat flour & other ingredients except the butter & with a little bit of water make a dough.
The dough should not be too sticky.
Rest for at least 30 minutes.
Make lemon sized balls of the dough, roll out parathas approx 4 inches in diameter, place on a hot griddle, cook on both sides, then lightly fry with about 1 tsp of butter for each paratha.
These parathas freeze well & can be made in advance.
If freezing however, roast & freeze, fry when you need to serve.
2 cups of spinach can be substituted with 1 cup each of spinach & chopped methi (fenugreek) leaves.
