Ingredients

1 cup flour
1 Tbsp baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup mashed ripe banana
1/4 cup white sugar
1/4 cup Light & Fit Vanilla yogurt (sour cream can bu used too)
1 egg
1/2 tsp. vanilla
Tips
For best flavor, place in an airtight container or bag overnight.
I freeze and have one every day for a morning snack Mon-Sat.
Directions
Preheat oven to 350 degrees. Grease or line muffin pans.
Mix flour, baking powder, baking soda and salt. In separate bowl, beat together banana, sugar, egg and vanilla. Stir in yogurt. Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15-20 minutes or until toothpick inserted into center of a muffin comes out clean. Let cool before serving.
Serving Size: 12 muffins (cupcake size)
