    1 bag (10 oz) Lysander's Soup Mix Minestrone with included special seasoning pack
    1 lb chicken breast, chopped
    2 cups carrots, chopped
    1 cup of pearled barley
    6 oz of Barilla Plus Penne Pasta


Rinse and sort beans. Soak beans overnight or for at least four hours. Add 6 cups of water to large pot containing beans and bring to a boil for one minute. Remove from heat and let sit for one hour. Bring beans to soft boil for one hour. Cook chicken in skillet until done. Chop chicken into bite-size pieces. Chop carrots into small pieces. Add seasoning packet, barley, chicken and carrots to beans and let boil for 20 minutes. Add penne pasta and let boil another 20 minutes. Water may be added as needed to bring the soup to the consistency you desire. Makes 8 servings.
