Ingredients

60g Red Split Lentils (dry weight)
60g Pearl Barley (dry weight)
4 - 5 Medium sized carrots
1 medium onion
1 leek
Teaspoon of coconut oil
2 stock cubes
Tips
Use some Smoked Paprika!
Directions
Fill a large pot with water and bring to the boil.
Add the 2 stock cubes and stir well.
Chop the onion and fry in a teaspoon of coconut oil until lightly browned (smells delicious!!)
Chop the leek lengthways and clean thoroughly and then chop into thin slices.
Shred the carrots and turnip using a grater or a food processor if you have one!
Add the barley and lentils to the water and stir well.
Add in all other ingredients, stir well and simmer for approx 40 mins. Season with salt and pepper and if you like smoked paprika, you can add a teaspoon of this to the soup. It gives it that extra something!
