Ingredients

    buttermilk:
    1-1/4 c. milk
    1 Tbsp rice vinegar
    Let Stand 10 Minutes

    Pancakes:
    1 egg
    1.1/4c buttermilk
    2 Tbsp Butter (I used country crock calcium)
    Beat well
    1-1/4 c. Garbonzo Flour
    1/2 tsp Xanthan gum
    2 tsp baking powder
    1/2 tsp baking soda
    combine all and beat
    stir in 1 tsp vanilla

    Let mix stand for 15 minutes it makes them so much better, and I don't understand why, but its the difference between perfect pancakes and tears.

Directions

Pour batter on griddle pre-heated to 300*F
use nonstick spray or butter
cook on one side until all the bubbles have popped and wholes takes their place.
Flip and cook another minute or so.

Serving Size: Makes 4 servings. Each serving is four 4" in pancakes.
