    2 Red Bell Peppers
    1/2 c. Mexican Mirepoix (frozen asset)
    1 c. Non-fat refried black beans (seasoned)
    1 c. cooked brown rice
    sprinkle of the cheese
    Mix it all together. Half and seed the red peppers. Portion out the filling, and bake at 425 for about 15 minutes.


Combine the filling and stuff the peppers. Easy peasy.
