Ingredients

Flour, white, 6 cup
Baking Powder, 1 tsp
Salt, 3 tsp
Shortening, 1 cup
Boiling Water, about 2 cup
Tips
Tortilla should have some black and brown spots and remain pliable when picked up. If tortilla is still light brown or white, then cook a little longer.
Directions
Preheat comale on low/medium heat. In a large bowl blend all dry ingredients with a wisk. Add shortening and blend. Slowly add boiling water just a little at a time, knead in, add more, knead in, etc. Keep adding water till masa becomes pliable enough to manipulate with your hands (you may not use all water). May still be a little sticky.
Remove masa from bowl and knead just a couple minutes more on a wood cutting board with a little bit more flour, just enough to get rid of stickiness. Return masa to bowl, spray with a little bit of cooking spray, cover and let stand for no less than 15 minutes. The longer you let stand, the more easier the masa will be to work with.
Take a small handful of masa (2" in diameter) and form into a ball, then flatten in your hand or in a tortilla press. Roll out on your wood cutting board with a rolling pin to make as flat as possible. Place rolled out tortilla on comale and cook about 1 minute or as soon as it starts to bubble, turn with a metal spatula and cook the other side for about the same amount of time.
Remove from heat and place in a dish cloth or steamer. Enjoy!!
