Ingredients

    1 cup Oats
    1 cup chocolate almond milk
    1 cup Flour
    cups Ground Flax Seed
    4 tablespoons whole flax seeds
    1- teaspoon Ground Cinnamon
    1 teaspoon Baking Powder
    teaspoons Baking Soda
    teaspoons Salt
    1 whole Beaten Egg or substitute (I use 1 TBSP flaxseed meal mixed with 3 WTPSP warm water, mix it up and let it sit 2 minutes)
    cups Sugar
    cups Oil
    1 teaspoon Vanilla Extract

Directions

"Preheat oven to 400 degrees F. Lightly grease muffin tin.
In a medium bowl, add oats and milk to soak together for 15 minutes, so the oats can soften.
While the oats are soaking, in a separate bowl combine the flour, ground flax seed, whole flax seeds cinnamon, baking powder, baking soda, and salt.
To the soaking oats, stir in the beaten egg, sugar, oil, and vanilla extract.
Once the 15 minutes has elapsed for the oat mixture, add the dry ingredients and stir until well blended. Fill the muffin cups about 3/4 full.
Place the pan in the preheated oven on the middle rack, and bake for 15 minutes.
Recipe notes: You can use old fashioned or quick cooking oats, or a combination of both, in this recipe. You can use brown sugar or granulated sugar. You can use any light flavored oil you choose, such as vegetable or canola oil. Its a very versatile recipe."
