Ingredients

    2 stalks celery, diced
    1 cup sliced carrots
    1/2 onion, diced
    3 garlic cloves, chopped
    1 tbsp olive oil
    Italian seasoning (or seasoning of choice)
    3 sausage links, sliced
    1 can diced tomatoes
    1 small can tomato sauce
    4 cups vegetable stock (or chicken or water)

Tips

It's best to use homemade stock because it adds a level of flavor complexity, but you can use cans or even water. Make it vegetarian by leaving out the sausage, it will still fill you up and be delicious!


Directions

Put olive oil and diced celery, carrots and onion into a frying pan, cover and cook until all vegetables are softened and onion is clear. Add spices and garlic, cook another 2 minutes. Add stock, sausage, and tomato. Fill cans with water to rinse and add to pot as well. Add lentils, bring to a boil. Simmer for at least an hour.

Serving Size: Makes about 8 1.5-cup bowls
