Introduction

Number of Servings: 6

Ingredients

    4 cups cooked brown rice
    2 cooked and shredded chicken breasts
    3/4 cup frozen corn
    1 can rinsed and drained black beans
    1 cup plain nonfat greek yogurt
    1 small can chopped green chiles
    1/2 cup salsa
    1 cup shredded cheese

Tips

I cheat and use ready rice that comes precooked in the micrwaveable bags. 2 bags = 4 cups. I also LOVE green chiles and spicey food so I actually used 2 small cans of chopped green chiles.


Directions

Mix all ingredients together, making sure cheese and yogurt are evenly distributed. Sprinkle top with cheese if desired. Bake on 350 for 30 minutes. If your rice was precooked and is cold or room temp, I would recommend cooking a little longer.

Serving Size: I would estimate this makes 6-8 1 cup servings. Enough to feed at least a family of 4 with probably even a little leftover.
