Water, 8.5 cups
Unsalted butter
Steel Cut Oats, dry, 2 cup
Coconut Milk (Silk), 1.75 cup
Brown Sugar, .25 cup, packed (7.8 oz.)
Salt, .5 tsp
Vanilla Extract, 1 tsp
Tips
The oatmeal will be runny at first glance, so you may want to reduce the amount of water. I didn't and while the first serving wasn't as good, I found that after I stored it in my fridge overnight after cooking it had the perfect consistency to eat over the next week.
Directions
1. Coat the insert of the slow cooker with a thin layer of butter. Add the water, oats, coconut or whole milk, brown sugar, and salt and stir to combine.
2. Cover and cook on low until the oats are cooked through and creamy, about 7 to 8 hours. Stir in the vanilla and serve immediately.
