Ingredients

    Barilla Plus Penne Pasta (4 cups)
    Chicken Breasts, lean and skinless (2 breasts, cubed)
    Garlic (2 tsp)
    Onions, raw, chopped (.5 cup)
    Peas, frozen (2 cups)
    Green Bell Peppers (.5 cup, chopped)
    Yellow Bell Peppers (.5 cup, chopped)
    Red Bell Peppers (.5 cup, chopped)
    Orange Bell Peppers (.5 cup, chopped)
    Extra Virgin Olive Oil (2-3 tbsp)
    Parm Cheese (optional)


    You can use any vegetables you like, substitute the ones in the recipe for ones you have in your refrigerator or freezer.

Directions

Cook pasta according to the directions on the package. In a skillet, meanwhile, heat the extra virgin olive oil and put in the garlic and onion. Saute for a minute or two, then add cubed chicken and vegetables. Once the chicken is cooked and the vegetables are tender, but still crisp, add this mixture to the cooked and drained pasta. Sprinkle with parm cheese if you like. Enjoy!
