Ingredients

    Cornstarch, .125 cup
    Vegetable Broth, 1 cup
    Peanut Butter, smooth style, .25 cup
    Curry powder, 1 tsp
    Brown Sugar, 6 tsp packed
    *Soy Sauce, 2 tbsp
    Ginger Root, 5 slices (1" dia)
    Garlic, 4 clove
    Peppers, sweet, red, raw, sliced, 1 cup
    Tofu, extra firm, 1 block
    Shiitake Mushrooms, 2 cup pieces
    Silk Pure Coconut Milk (Original), 1 cup
    Lime Juice, .5 fl oz
    *Rice, Kraft Minute Whole Grain Brown Rice, 0.75 cup

Directions

Combine all ingredients through shiitake mushrooms into a slow cooker. Place on low for 4 hours. Stir in coconut milk, lime juice, and spinach. Turn slow cooker on high and cook for 25 minutes.

Cook rice according to directions ommiting fat and salt.
