Ingredients

    2 c. potatoes, cut into 1/2 inch cubes
    1 lg. carrot, diced
    1 c. leeks, chopped, white part only
    1 garlic clove, minced
    4 c. FF chicken broth
    4 oz. canadian-style bacon (cooked)
    1/2 c. uncooked barley, pearl
    1 tsp. bay leaf, crushed
    1/4 tsp ground thyme
    1/4 tsp. black pepper
    1/2 c. FF evaporated milk
    2 fl oz. FF half and half

Directions

In a slow cooker, combine potatoes, carrots, leek, garlic, broth, barley, bay leaf, thyme, pepper and bacon. Cover and cook on low for 6 ours or until vegetables and barley are tender.

Stir in evaporated milk and half and half and heat through uncovered, about 10 minutes.

Yields 8 - 1 1/4 cups per serving.

    I fixed this & my family couldn't even eat it. I'm not sure if there was too much thyme or whether it was the bay leaves, but it did't quite taste right. It might be better if you didn't put the bay leaves or thyme. I may try to fix it again without them & see how it tastes. - 1/11/10
