Ingredients

1 tbsp. grapeseed or olive oil
2 medium all-purpose potatoes, peeled and cubed
2 large chicken breasts, cubed
1 tbsp. butter
1 medium onion, diced
1 green bell pepper, diced
1 large carrot, diced
3 garlic cloves, minced
2 cans (15oz) diced tomatoes
1/4 cup chopped, fresh Italian (flat-leaf) parsley
1 tsp thyme leaves
salt, and pepper to taste
Directions
In large skillet, heat oil. Fry potatoes until lightly browned on all sides (about 5 minutes). Transfer to plate; set aside.
Fry chicken in same pan until lightly browned on all sides (about 5 minutes). Transfer to plate; set aside.
In same skillet, melt butter. Add onion, bell pepper, carrot, and garlic; saute over medium high heat until tender-crisp, 2 to 3 minutes. Return potato-chicken mixture to skillet. Add tomatoes, parsley, thyme, salt, and pepper; stir to thoroughly combine. Cook until mixture comes to a boil. Reduce heat to low, cover, and let simmer, stirring occasionally, until flavors blend and potatoes are tender, about 15 minutes. Makes 4 servings.
