Introduction

Just good old fashioned beef stew with a few less calories in the crock pot. Just good old fashioned beef stew with a few less calories in the crock pot.
Number of Servings: 8

Ingredients

    1 tsp olive oil
    8 oz stew meat
    1/2 cup onion
    5 small to medium size carrots
    2 medium to large stalks celery
    2 medium potatoes
    1 cup Low sodium chicken broth
    6-8 cups water
    1 tbsp brown gravy mix
    1/4 cup corn starch
    1/2 cup cold water

Tips

If stew is not thick enough, repeat the water and corn starch step.


Directions

In skillet, heat olive oil and add stew meat and brown (you do not have to cook until done as it will cook more in the stew). You can add the onion in with the meat if you want also. When meat is browned, put everything in the skillet in the crock pot. While your meat is browning, chop the other vegetables into bite size pieces. Add vegetables into the crock pot also. Add chicken broth and 6-8 cups of water. Let cook on high for 4 hours or low for 8 hours. To thicken: in a separate cup mix cold water with corn starch and brown gravy mix until no clumps (if you need more water feel free to use it). Pour into stew and stir. Allow to cook for about 5 to 10 min before serving.
