Introduction


These taste like a fresh out of the oven banana bread-pancake. Next time I may add a handful of chopped walnuts at the end! I cooked mine in a skillet with Tropical Traditions Gold label coconut oil which gave it slight coconut flavor that really added to the overall experience.

Here’s my recipe which I put together with my handy Vitamix from 4-5 different recipes I found online + my experience! The original inspiration came from www.colourfulpalate.com!

Ingredients





    1 1/2 cups oatmeal (old fashioned works best)

    1/2 cup whole wheat flour (or try a gluten free flour)

    2 tsp baking powder

    1 1/2 cups almond milk (Vanilla, unsweetened)

    2 bananas (the more ripe they are, the better the flavor)

    1 tsp vanilla

    optional: 4-5 drops of Vanilla Creme Stevia (Sweetleaf brand)

    Tropical Traditions Coconut Oil for skillet



Tips

Topping ideas:

Pure maple syrup

Whipped coconut cream

Sliced strawberries or banana’s

Fresh blueberries


Directions

Instructions:

Place skillet on stove on med-high heat with about 1 tsp coconut oil to pre-heat
Toss all ingredients in your Vitamix or high powered blender (except for coconut oil and toppings)
Turn Vitamix on low and gradually move up to high and blend for about 10-30 seconds until smooth.
Pour batter into skillet and cook pancakes

This recipe made about 10 medium sized pancakes for me. Next time, I’ll try adding some different ingredients such as hemp seed, walnuts or chia seeds to increase the super-food value! I’m excited to try blueberries as a topping as well.
