Ingredients

    5 4oz boneless, skinless chicken breasts
    2 Large hard boiled eggs
    1 cup finely chopped red bell pepper
    1 cup finely chopped celery
    1/2 cup finely chopped pickle
    2 tsp salt
    1/2 cup light mayo
    1/4 cup yogurt

Directions

In a large pot place chicken breasts and a generous amount of water and bring to a boil. Boil for 20 minutes. In a separate pot, boil the eggs to hard boil (or 10-15 minutes). Drain the water from both pots and allow eggs and chicken to cool. Peel the eggs and chop. Chop the chicken. Place all ingredients in a large bowl and stir. Spread 1/4 cup of chicken salad on wheat bread or Pita bread or add to a green salad.
