Introduction

Number of Servings: 6

Ingredients

    1 lb of Venison tenderloin cubed
    1 cup Green Pepper sliced
    1 cup Red Pepper sliced
    1 cup fresh mushrooms
    1 med to large onion cut in half then quartered
    1/2 cup red wine (drinking quality)
    1 cup Brocolli florets cut in bite size pieces
    1 cup (large handful) Snap peas
    1 Tbsp Olive oil

Tips

Also great served over Brown rice (not in nutritional calculation)


Directions

Add 1 Tbsp olive oil to hot skillet, add venison and brown all sides (about 3-4 minutes). Turn heat to med-low and add half red wine and loosen oil and venison scraps on bottom of skillet. Pour venison and wine into bowl and set aside. Put Vegetables in skillet and cook til almost tender-crisp, add venison back in with rest of red wine. Continue cooking for about 4-5 minutes or until venison is cooked thru.
