Introduction

Ingredients

    1 bag of frozen brocolli
    1 bag of frozen cauliflower
    2 boneless skinless chicken breasts
    1/2 cup light mayo
    2 tbsp of regular mayo
    1/2 juice of one lemon
    1/3 cup seasoned breadcrumbs
    1 can of mushroom soup, 98% ff
    1/2 cup fat free cheddar cheese
    1 tbsp of mrs dash garlic and herb
    season it with your favoite seasonings. I like Lawrys, garlic salt, and fresh ground pepper.

Tips

I like to add some sauteed mushrooms. I sautee them in a little bit of garlic and smart butter.


Directions

Boil chicken in water with mrs dash. In another pan steam brocolli and cauliflower until tender. In a medium bowl add soup, mayo, seasonings, and lemon juice, mix well. Cut chicken into bite size pieces add to mixture, add vegis and mix. Add breadcrumbs and mix. Put mixture in casserole dish. Cover with cheese and bake for about 45 minutea on 350.

Serving Size: makes about 6 1 cup servings
