Introduction

Ingredients

    2 boneless, skinless chicken breast halves
    3/4 tsp fajita or taco seasoning
    1 tbsp olive oil
    3/4 cup sweet pepper strips
    1/2 medium fresh peach, cut into thin slices, or 1/2 cup frozen peach slices, thawed

Directions

Sprinkle both sides of chicken with seasoning. In a large skillet, cook chicken in 2 tsp of light olive oil over medium heat for 12-14 minutes or until chicken is no longer pink, turning once. Place chicken in serving dish.

Add 2 tsp light olive oil to skillet. Add pepper strips. Stir fry for 3 minutes or until pepper strips are crisp but tender. Add peach slices. Cook for 1-2 minutes more or until heated through. Spoon pepper strips and peaches over chicken.
