Ingredients

    1 cup all-purpose flour
    0.5 cup Whole Wheat Flour
    1 tsp Baking Powde
    0.5 tsp Baking Soda
    0/5 tsp Cinnamon, ground
    0.5 tsp Kosher Salt
    1 ripe Banana
    1 Egg
    2 tbsp Canola Oil
    0.75 cup Brown Sugar
    6 Splenda Packets (or 0.75 sugar)
    0.25 Applesauce, unsweetened
    2 tsp Vanilla Extract
    1.75 cups Old Fashioned oats
    0.75 cup Cranberries, dried, sweetened (craisins)
    0.75 cup Pecans, chopped

Directions

Preheat oven to 350, put parchment paper on 2 cookie sheets.

In large bowl whisk flour, baking powder, baking soda, cinnamon and salt.

In medium bowl mash banana. Add egg, oil, brown sugar, Splenda, applesauce and vanilla. Mix.

Add wet ingredients to dry and mix.
Fold in oats, craisins and pecans.

Drop a tablespoon (about 1.5-2 inch balls) onto baking sheets 2 inches apart.

But both sheets in the oven for 12 - 14 minutes, rotating sheets half way through.

Let cool for a few minutes on the sheet before transferring to wire rack to completely cool.

Serving Size: makes 35-40 cookies
