Number of Servings: 10

Ingredients

    1 pound ground turkey, lean
    1 egg
    1/4 cup bread crumbs (I use gluten free)
    1 bag frozen corn
    1 28oz can crushed tomatoes
    1 16oz can tomatoes with mild chilis (like Rotel)
    1 15oz can black beans, rinsed
    salt/pepper to taste

Directions

Mix turkey, egg and bread crumbs and form into meatballs (I did mini meatballs). You can bake these if you wish or add to the soup mixture and cook this way.

Pour rest of ingredients in a large slow cooker and add meatballs, cook on high 3-4 hours.

Serving Size: makes apptoximately 10 generous 1cup servings
