Ingredients

    5 Medium yellow squash.
    1 medium red onion
    2 cloves of garlic.
    1 teaspoon olive oil
    1/4 Cup Shaved Parmesean Cheese
    1/2 teaspoon (more or less to taste) of crushed red pepper flakes

Directions

Get 5 Medium yellow squash.
Wash it and then peel it length wise into long ribbons (noodles) with a vegetable peeler. Keep turning and peeling until you hit seeds. Throw the seeds/core away.

Thinly slice one medium red onion and 2 cloves of garlic.

Saute squash, onion and garlic in a pan with a little (1 teaspoon) olive oil just until tender.

Remove from heat, top with a little fresh shaved parmesean (1/4 cup) cheese and 1/2 teaspoon (more or less to taste) of crushed red pepper flakes.

Each Serving: 59 calories, 1.5g fat, 0mg cholesterol, 10mg sodium, 10 carbs, 3.5g fiber, 3g protein
