Introduction

Ingredients

    2 large baking potatoes or 3 medium Yukon Gold potatoes, diced
    2 cups chopped onions
    6 cloves of garlic, minced
    1 cup of olive oil
    8 oz of Chorizo or Linguica sausage, chopped
    7 extra large eggs
    1/4 cup Half & Half
    1/4 cup ground Guajillo chili powder
    1 Tbsp kosher salt

Tips

Guajillo chilis are very flavorful, but are not very hot, so don't be alarmed at the amount!


Directions

Preheat oven to 300 degrees
Dice potatoes into small (.5") cubes
Chop the onions - medium chop
Chop or crumble the chorizo
Add oil to a large saute pan under medium heat
Add potatoes and saute, covered, stirring to keep from browning for 15 min or until they are tender.
Add the chopped onion and continue to saute gently until transparent.
Add the garlic and stir
Add the chorizo and combine; saute, covered until the sausage firms up.
Drain any excess oil from the pan
Add the salt and ground chili & combine
Whisk the eggs in a bowl with the half & Half
Pour the egg mixture over the potato, onion sausage mixture in the saute pan.
Using a spatula, make sure that the egg mixture is evenly distributed, and reaches the bottom of the pan.

Add the mozzarella to the top of the tortilla
Finish in the oven for 20 minutes
