Ingredients

    3 tbsp Maple Grove Farms of Vermont
    2.5 tbsp Light Olive Oil
    2 tsp lime juice
    1 cup fresh eggplant
    1/3 cup zucchini slices
    1/2 cup green peppers
    3/4 cup tofu firm
    1/4 cup chopped red onions
    1/2 romaine lettuce
    4 tsp Basil Pesto
    4 Chapathis (recipe in my recipe collection)

Directions

Mix all together. Pour on the vegetables and marinade for an hour and then grill. (Use only zuchini, eggplant, green bell pepper and tofu)

Grilled vegetables yield 4 servings to roll in a chapathi.

Put a tsp of pesto on each chapathi and place 1 serving of grilled vegetables and tofu in the chapathi, add fresh chopped onion and lettuce in each chapathi and roll it and serve.
