Ingredients

3 Quarts water
8 Lg. Potatoes, peeled & sliced
4 Lg. Carrots, diced
2 Stalks Celery, chopped
2 Sm. Onions, chopped
2 T. butter
2 T. flour
1 1/2 t. Salt
1 t. Pepper, black
1/4 t. Paprika
12 oz. Box Mori-Nu Silken Tofu, soft, pureed
Directions
Heat water in a large pot. Add potatoes, carrots & celery; simmer 20 minutes or until tender but firm.
Remove potato mixture from heat. Drain and set aside, reserving liquid.
Return pot to heat, add butter, and saute onions until tender. Add flour, spices, and pureed tofu and stir.
Add potato mixture to pot. Continue cooking and stirring, adding reserved liquid one ladle at a time until desired consistency is reached.
Makes 10 2-cup servings.
