Ingredients
Ingredients:
Tilapia, 10 oz
Couscous (dry), .25 cup
Oranges, 1 large (3-1/16" dia)
Olive Oil, 2 tsp (remove)
Garlic, 1 clove
Ginger Root, 20 grams (1/2 inch thinly sliced)
Red Ripe Tomatoes, 2 cup cherry tomatoes (each cut in half)
Shallots, 1 tbsp chopped
Directions
1. Prepare couscous according to package directions.
2. Cut away peel and white pith of orange. Working over bowl, curt orange into segments, adding segments to bowl along with any juices.
3. Meanwhile, in nonstick skillet on medium, heat 1 tsp of oil. Season tilapia with 1/4 tsp of sea salt and 1/8 tsp freshly ground black pepper.
4. Add to skillet and cook 1 to 2 minutes per side, or until opaque throughout. Transfer to plate and cover with foil to keep warm.
5. Wipe out skillet and heat remaining 2 tsp of oil over medium heat. Add garlic, shallots and ginger and cook about 1 minute or until golden brown, stirring occasionally.
6. Add tomatoes and cook about 3 minutes, or until they begin to break down, tossing occasionally.
7. Add oranges and any juices and gently toss to heat through.
8. Serve tilipia and couscous.
