Ingredients

    2 tsp. olive oil
    1 cup onion, chopped
    1 cup carrots, diced
    3/4 cup celery, chopped
    1 tbsp. curry powder
    1 cup green/brown lentils, rinsed and sorted
    1 - 15 oz. can crushed tomatoes
    3 cups water
    2 packets Herb Ox sodium free bullion: beef, chicken, or vegetable.

Tips

The servings may be larger, as I have a tendency to add more liquid as I don't care for a thick soup - So a serving is 1/6th of your finished soup.


Directions

Heat Oil on medium heat in a Dutch oven. Gently saute onions, celery, and carrots until softened. Add curry powder and stir into vegetables. Add lentils, tomatoes, water, and bullion. Bring to a boil, then reduce heat and simmer for 25 minutes,
