Ingredients

    2 1/4 Cups Whole Wheat Flour
    3/4 Cup Granulated Sugar
    3/4 Cup Brown Sugar
    1 Cup Non-Hydrogenated Margarine, softened
    1 ripe banana, mashed
    1 tsp salt
    1 tsp baking soda
    1 tsp vanilla extract
    1 tsp cinnamon

Directions

Preheat oven to 350 F. In a small bowl, mix together the flour, the salt, and the baking soda. In a large bowl, beat the margarine, the brown sugar, and the granulated sugar until smooth. Add the mashed banana and the vanilla extract. Gradually add the flour while beating. Drop the mix by spoonfuls on an ungreased baking sheet, leaving 1-inch spaces in between. Bake for 10 minutes or until the edges are golden brown.

*note: I was able to produce 75 cookies, they were small, I think the picture may be misleading to their size. They appear to be rather large, but in reality were quite small.

    I am I vegan, so instead of the 'non-hydrogenated margarine' I used apple sauce. Just one of the treetop lunch cups was all. They were soo good and less fat :) - 7/1/10

    Tastes like banana bread. Something missing still. Maybe next time I'll add more cinnamon or pie spice or even another banana (I used 2). I also used 1/4 cup white and 1/4 cup brown sugar. They were plenty sweet and a really nice treat. We don't normally have any sweets in house. Thanks. - 7/18/09

    They tasted good but i'm not sure I ever got them done and I cooked them about 20 minutes and then they stuck to the sheet. And a couple spread out so much they fell over the edge onto the bottom of the oven so it currently stinks like burnt in my house, not that I blame the recipe for that. - 11/11/09

    Love these! The first time I made them (oh yes I've made them more than once) I followed the recipe and found them to be too sweet since then I've used 1 cup of sugar and they are perfect!
    I'd like to try other fruit like apple instead of banana will this effect the binding of the mixture? Thanks

    Very good! My children and I enjoyed them.I cut back the sugar to 1c. Total. And theywere plenty sweet. I used a cookie scoop and got 51cookies. I live @ high altitude and had great results. The cookies were soft and didn't spread out much. I'll definitely make them again. - 2/5/11

    I made 46 cookies with these using a pampered chef cookie dropper that is about a TBSP. I was stingy with my scoops. I also found that even though the recipe says "ungreased baking sheet" but my cookies came out a lot better after i greased them. They were yummy. I would make them again. - 11/13/08

    I got exactly 40 cookies, a little more than 1" across. I used Splenda, and with 40 cookies the calorie count was around 60 cal. per cookie, but they're pretty small. I don't really see how you could make 75 cookies that look like the pic, with sugar, and have them be 59 cal.They taste great!! - 2/21/08
