Ingredients

wheat bulgar (cracked wheat #2)
olive oil
onion
chicken stock
canned diced tomatoes
vermicelli (handful)
Tips
Do not add salt if your stock is high in salt.
Don't skip the vermicelli -- aka thin spagetti -- it makes a huge difference!
and please do not substitute other pasta, as this does not work for this recipe. I used wheat thin spagetti.
Directions
1. Heat the oil in a saucepan with lid. Add onion, mix until transparent. Reduce heat to low and add vermicelli, mix, simmer for two minutes or until vermicelli looks golden (not burnt).
2. Add bulgar into the saucepan, mix, then add chicken/vegetable stock, tomatoes and season. Mix well.
3. Cover the pan and simmer very gently on low heat for four minutes, until the mixture is moist but not watery. If it is too dry, add more stock. Turn off heat.
4. Cover with a tea towel, place the lid tightly on top and let it stand for 10 minutes before serving.
Serving Size: makes 4 servings
