Ingredients

    Tbsp Oil
    3 cloves Garlic
    Low sodium broth, Beef or Chicken , 8 cups (2 cartons)
    Canned Tomatoes, 3 cup
    Parsnips, 1.5 cup slices
    Carrots, raw, 2 cup, chopped
    Cabbage, fresh, 2 cup, chopped
    Onions, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Sweet peppers (bell), 1 cup, chopped
    Snap peas, 1. cup

Directions

Saute Onions & Minced garlic
Add remaining ingredients, spice & herbs to taste.
Simmer till just tender.

Serving Size: Makes 8 Large bowls
