Ingredients

    4-5 boneless, skinless chicken breasts, trimmed
    1 10oz can of Campbell's Healthy Request Cream of Chicken Soup
    1 10 oz can of Campbell's Healthy Request Cheddar Soup
    1 10 oz can of Mild Enchilada Sauce, can use medium or hot if you prefer
    1 1/2 c. reduced sodium chicken broth
    1 tsp chili power or more if you desire extra heat
    1 tsp cumin
    Cracked black pepper to taste
    Frank's Red Hot Sauce to taste
    Low fat Sharp Cheddar cheese
    Daisy Light Sour Cream
    Bite size tortilla chips or tortilla strips
    Scallions, chopped, 1TBS

Tips

This is awesome the day after. You may have to thin it with a little more of the reduced sodium chicken broth.


Directions

Add all ingredients in a slow cooker. Set for 8 hours or so until the chicken is fully cooked and falling apart. Remove the chicken, shred and return to the slow cooker. Cook for another 30 minutes.

Garnish with cheddar cheese, 1 TBS. sour cream and a 1 TBS of tortilla chips or strips. Add scallions also if desired.
