Ingredients

1/2 medium head of cabbage - chopped into bite size pieces.
1/2 to 1/3 cup red onion - diced
1/3 cup craisins
1 package oriental flavor ramen - reserve flavor packet for dressing.
Dressing = oriental flavor packet,
2 tbsp. olive oil,
2 tbsp. vinegar (whatever flavor you prefer. I mix red wine vinegar, cider and balsamic),
1 tsp. black pepper,
1 tbsp. honey.
Tips
***Sliced almonds or chopped walnuts are also good in this but are not calculated into calories for this recipe.
Directions
Pre-heat oven to 375 degrees.
In a large bowl add cabbage, onion and craisins. Mix.
Break up ramen noodles into small pieces, reserve flavor packet for later, place noodles on cookie sheet and bake approximately 7 min. or until golden. Let cool.
While ramen is cooling make dressing.
Dressing = In a small bowl add flavor packet, olive oil and vinegar to taste. Mix until smooth. Pour over cabbage mixture. Mix well until everything is coated.
Now add toasted ramen and season with pepper to taste.
Serving Size: makes 6 1/2-cup servings
