Ingredients

1.66 cup Cornmeal
.25 cup all purpose flour
1 tsp baking powder
1 tbsp splenda
2 large eggs
1.5 cup milk
2 tsp bacon grease
1 tsp extra virgin olive oil
2 oz cheddar cheese
4 medium pieces bacon, chopped
1 poblano chile
or
.5 cup canned green chiles
Tips
Poblano chile is not spicy. Kick it up with jalepenos. Replace splenda with sugar if no sugar concerns.
Directions
Set oven to low broil. Place bacon on sheet pan and place under broiler for 8 to 10 minutes.
While bacon is cooking, in a large bowl mix together cornmeal, flour, baking powder, and splenda. Whisk to mix together and remove clumps. In a second bowl, mix together eggs, milk, and olive oil. When bacon is finished cooking, add 2 tsp of bacon grease to wet ingredients. Slowly mix wet ingredients into dry ingredients, whisking. Fold in cheddar cheese, chopped green chiles, and chopped bacon pieces.
Heat your griddle to medium heat. Use a .25 meausring cup to spoon mixture onto griddle. Place in warm oven until ready to serve with hot maple syrup.
