Ingredients

Chicken, Peanut Butter, Chili, Garlic, Honey, Soy Sauce, Balsamic Vinegar, Coriander (optional)
Tips
This appears to be the same calorie count as standard satay but it tastes much nicer (especially with homemade peanut butter) and the ingredients are all "real food". Calories can be cut by switching the honey or peanut butter used.
Directions
1. Combine everything except the chicken together in a food processor (or mixing bowl if you want an arm workout) until smooth(ish)
2.Prepare a baking tray with some greaseproof paper
3. Cut the chicken into strips or chunks as desired and place on greaseproof paper
4. Smear the chicken with the sauce. If you have time, allow it to marinate anywhere between 20mins and overnight
5. Oven bake at a medium heat for 20-30mins until the chicken is cooked through
6. Serve with veg!
